#1 - How To Make Punjabi Chole Bhature | Chana Bhatura Recipe

Ingredients

For Chole/chickpeas Curry -
Chickpeas/kabuli Chana, Soaked Overnight - 1 Cup (You Can This Substitute With Canned Chickpeas)
Garlic Cloves, Sliced - 2 Tbsp
Tea Bags - 2 Or 2 Tbsp Tea Tied In A Muslin Cloth
Ginger, Julienned - 1 Tbsp + More For Garnishing
Green Chili, Sliced - 4-5 (Add Less If You Are Adding Red Chili Powder)
Red Onion, Chopped - 1 Medium
Dried Mango Powder/Amchur - 1 Tsp
Salt To Taste
Pomegranate Seeds/Aananardana - 1 Tsp
Tomato Puree - ¾ Cup
Turmeric Powder/Haldi Powder- ¼ Tsp
Coriander Powder/Dhania Powder - 1 Tbsp
Chana Masala - 2 Tbsp (I Have Used Mdh Chana Masala)
Oil - 2 Tbsp
Cumin Seeds - 1 Tsp

Whole Spices -
Bay Leaf/tej Patta
Cinnamon Stick/dalchini - 1 Stick
Cloves/laung - 2-3
Star Anise/chakra Phool - 1
Black Cardamom Pods/badi Elaichi - 2
½ Tsp Cumin Seeds (Jeera)

For The Bhature -
All-Purpose Flour/maida) - 1½ Cup
Semolina/suji - ½ Cup
Baking Powder - 1½ Tsp
Sugar - 2 Tsp
Salt To Taste
Oil - 2-3 Tbsp
Natural Yogurt - ½ Cup
Warm Water As Needed
Oil For Deep-Frying

For Serving -
Onions
Lemon Wedges
Fresh Coriander Leaves

#2 - Chole Bhature – Delhi Style

Ingredients

For The Chickpea's (CHOLE) -
Chickpea’s (chole) – 1 cup
Tea bag’s – 2
Baking soda – half teaspoon
Clarified butter – 5 or 6 tablespoon
Coriander powder (Dhaniya powder) – 1 teaspoon
Kashmiri red chilli powder – 1 teaspoon
Garam masala – 1 teaspoon
Crushed anardada (pomegranate seeds) – 1 teaspoon
Chole masala – 4 teaspoon
Green chilli sliced into two yet attached from the top – 4 or 5 depending on your taste
2 inch ginger piece – cut into julienne
Salt to taste
Water - 4 cups

Fot The Bhatura's -
All purpose flour (maida) – 3 cup
Semolina (suji) – half cup
Yogurt (dahi) – half cup
Ghee (clarified butter) – 1 Tablespoon
Baking soda – 1/4th teaspoon
Baking powder – half teaspoon
Sugar – 1 teaspoon
Salt - half teaspoon
Lukewarm water – as required

#3 - How To Make Chole Bhature In 60 Minutes

Ingredients

For Chole -
2 cup chole, soaked overnight
Oil
Cinnamon stick-1 inch
Cumin seeds-1 table spoon
Onion – 1(finely chopped)
Ginger-Garlic paste- 1 table spoon
Tomatoes – 2 (finely chopped)
Kashmiri chilli powder – 1 table spoon
Turmeric powder- 1 table spoon
Coriander powder- 2 table spoon
Cumin powder-1 table spoon
Aamchur powder / dry-mango powder- 1/2 table spoon
Salt to taste
Garam masala – 1 table spoon
Water
Coriander leaves, finely chopped – 1 table spoon

For Bhature -
2 cup Flour (Maida)
1 cup Suji (Semolina)
1/2 cup Dahi (Curd)
1/2 table spoon Baking Soda
Water to make dough

#4 - Chole Bhature with Masala Aloo

Ingredients

Punjabi Chole -
Kabuli Chana - 2 cups
Onion - 2 medium size (chopped)
Tea Bags - 2 no.
Ginger Garlic Paste - 1 tsp
Coriander Powder - 2 tsp
Red Chili Powder - 1 tsp
Garam Masala Powder - 1/2 to 1 tsp
Aamchur Powder - 1 tsp
Hing - 1 pinch
Black Salt - as per taste
Cumin Seeds - 1 tsp
White Salt - as per taste
Oil - 3 to 4 tbsp
Coriander Leaves - for garnish

Whole Spices For Homemade Chole Masala -
Whole Red Chilli - 2
Cumin Seeds - 1.5 tsp
Black Cardamom - 4
Cloves - 3 to 4
Black Pepper - 5 to 6
Cinnamon Stick - 1 inch
Fennel Seeds (sauf) - 1 tsp
Coriander Seeds - 1 tsp
Bay Leaf - 1 (Roast all spices till they got brown and let them cool, then ground into fine powder).

For Masala Aloo -
Potatoes - 5 to 6 medium size
Turmeric powder - 1/2 tsp
Coriander powder - 2 tsp
Red chilli powder - 1 tsp
Dry mango powder - 1/2 tsp
Cumin Seeds - 1 tsp
Hing - 1 pinch
Garam masala powder - 1/2 tsp
Cumin Seeds powder - 1 tsp
Refined oil - 2 tbsp
Salt - as per taste
Coriander leaves - for garnish.

For Bhature -
Maida - 2 cups
Rawa (suji) - 2 cups
Sugar - 1 tsp
Salt - as per taste
Eno fruit salt - 1 sachet
Oil for deep frying
Luke warm water for kneading the dough.

#5 - How To make Homemade Chole Bhature

Ingredients

Channa (chickpeas, soaked overnight) - 2 cup
Coconut/mustard oil: 2 tsp
Black pepper: 1 tsp
Cinnamon : 1 stick
Cloves: 3
Bay leaf : 1
Cardamom : 2-3
Turmeric powder : 1 tsp
Chili powder : 1.5 tsp
Coriander powder : 2 tsp
Cumin powder : 1 tsp
Cumin seeds : 1 tsp
Asafoetida : 1/2 tsp
Salt – for taste
Chopped onions: 1.5 cups
Chopped tomatoes: 1 cup
Chopped ginger :2 tsp
Chopped garlic: 2 tsp
Ajwain :1 tsp
Lime juice : 1 tbsp.
Green chilis, finely chopped  : 3

For The Bhaturas You’ll Be Needing These -
Maida (refined flour): 2-2.5 cups
Yeast – soak them in luke warm water for 10 minutes : 1/2 tsp
Whole wheat flour – ½ cup
Pinch of salt
Water to knead the dough
Frying oil
