Ras Malai or Rosh malai is a Bengali dessert.The name Ras Malai comes from two parts in Urdu: “Ras” meaning “juice/juicy” and “Malai”, meaning “cream”. Rasmalai is a Bengali delicacy made with cottage cheese. It is a popular Indian dessert rich in milk. Today  I am here with a quick and instant version of Rasmalai using milk powder. This rasmalai recipe is very easy to make at home. In this rasmalai recipe, I have shared two methods to prepare it, one is the quick rasmalai recipe in 10 minutes and another is from scratch.
#1 - Rasmalai Recipe, How To Make Best Soft Rasmalai At Home

Ingredients

For rasgulla sponges -
5 cups full fat milk
2 to 3 tbsp lemon juice, add as required
1 cups sugar
5 cups water
2 teaspoon semolina or 1 teaspoon cornflour
1 tbsp kewra water
½ tsp cardamom powder (elaichi powder)

For Ras (Milk Syrup) -
750 ml/3 cup Full fat milk
7- 8 Green Cardamom, peeled and pounded
½  Teaspoon Kewra essence /rose water
2 Generous pinches Saffron/Kesar
A few blanched almonds
Sugar to taste
A few Pistachios, finely chopped
Silver leaf to garnish

#2 - Rasmalai (Mango Ras Malai) Recipe - Dessert Recipe - Mango recipe

Ingredients

For Rasmalai Patties -
5 cups milk
2 tbsp lemon juice
1/3 tsp Maida/Plain flour
1/3 tsp Sooji/Rava
1 tbsp Chopped nuts(optional)
1 and 1/2 cups sugar(for sugar syrup)
2  and 1/2 cups water(for sugar syrup)

For Milk mixture -
3 cups of milk
1/2 cup mango puree
2 and 1/2 tablespoons of sugar (adjust to your taste)

10 cup Full Fat Milk
2 lemon juice
some ice cubes

For Rash( Milk Syrup) -
5 cup Full Fat Milk
2 cup Sugar
5 Fresh paan leaves
2-3 drops kewra & rose essence
4-5 Freshly crushed green cardamom
2-3 drops  Green food color

For Making Malai (Paneer) Balls And For Boiling Paneer Balls -
4.35g Paneer
4 tsp All purpose flour
2 tsp Fine rava or Sooji
1/8 tsp Baking powder
Small rock sugar candy( mishri sugar)
7 cup Water
3 cup Sugar
2-3 Freshly crushed green cardamom
3-4 drops Kewra essesnce
Some Thinly sliced pistachios

Ingredients

Bread slices - 5-6
Milk - 3 cups
Fresh cream - 1/2 cup
Condensed milk/milkmaid - 5-6 tbsp
Saffron - 6-7 strands
Cardamom powder - 1/4 tsp
